From vine to wine

The 4 seasons from vine to cellar

Our 16-hectare vineyard is nestled in the heart of the Vallée Noble, overlooked by the Zinnkoepflé Grand Cru.

Vine care and plot maintenance

The first care.

After the harvest, a cycle comes to an end and the vines are gradually stripped bare. We prepare for pruning and care for the vines.

This care is essential during the vine's resting period, as it determines the plant's vigor and development for the next cycle.

Spring

The vine wakes up. Daily care

Nature awakens...

And yet the vine cries!

This means that sap is rising to form delicate pearls at the end of pruned shoots. The first buds appear, and those which are not useful to the vine's productivity are eliminated.

Then the first leaves appear, followed by flowering, which sets the approximate date for the next harvest, some 100 days later.

Summer

We take care of the grapes to obtain perfect bunches.

THE veraison

In summer, the grapes soak up the sun, swell and begin to take on the color they will have when ripe.

In July, we select and cut a few bunches of grapes. This is the green harvest, which regulates and optimizes the yield of each vine in preparation for the harvest.

A countdown begins: the sky is scrutinized because the quality of the coming vintage depends on the weather in this last month.

Autumn

Autumn colors dress up our vineyards. Harvest time

It's harvest time!

The first pruning shears chirp. The grape-pickers load their buckets with the precious fruit, striding along our rows of vines in a friendly atmosphere.

All our harvests are done by hand, which enables us to sort the grapes in a way that is essential to the production and quality of our wine. These expert hands select the best bunches with rigor and precision.

From vine to cellar

Then the work in the cellar begins, with rigor, precision and patience.

All the care taken in the vineyard continues in the winemaking process. After pressing, fermentation begins slowly under Marc's experienced eye. In the cellar, his precise gestures will enable him to create aromatic wines with a unique personality that will gain in complexity during aging. The wines are bottled when they have achieved the finesse and elegance we love so much at Domaine Nicollet.
